We got a Mangalista pork belly from Mosefund  Farm in Branchville, NJ...the personal chef from the farm, Michael Clampffer, gave a demonstration at our local Farmer&#039;s Market with tastings, and my husband hadn&#039;t even swallowed yet when he headed over to purchase our little pound-and-a-quarter pork belly! I&#039;m preparing diced home-grown butternut squash and a crazy-simple applesauce (more thanks to chef Michael Clampffer) to go with it. Cannot wait!!!</description>

We paired the pork belly w. a cherries gastrique &amp; a beautiful wine from Broadbent Selections..Warwick, The First Lady, 2009 Marlborough.  Stunning.  Preparation was great &amp; the pork belly was tender &amp; fabulous!!!  Local pork from Virginia!
