Mussels with Parmigiano and Wine Broth

Ok, so this does sound like a weird combination. But bottom line is that it really works. I was in the mood for mussels and fries. I had never tried making them before, I didn’t have a recipe and I couldn’t be bothered to find a recipe or ask my Belgian neighbors. So I just made one up as I went along (its kind of how it works most times).

– Mussels
– White wine (I used chardonnay)
– 1 red onion (chopped)
– 3 clove sof garlic (thin slices)
– 1 cup chopped coriander
– Salt and pepper to taste
– 1 cup chopped fresh parmigiano
– Olive oil

In a large pot, add enough olive oil to saute the onions and garlic. Add the onions and saute until translucent. Add garlic. After about a minute add about 1/2 bottle of wine, coriander, salt and pepper. Bring to a boil. Add mussels and parmigiano. Mix then cover pot. Let it simmer for about 5 minutes or until mussels open up and you are all done.

The whole thing takes less than 15 minutes.

I served this with southwestern style fries (recipe on a separate post) with mayo. So damn good.
