Spaghetti with Rustic Pasta Sauce

I was in Tuscany a few weeks ago. I had rented a house and instead of eating out every day, I actually cooked a few times. The local ingredients are so good it seemed like a shame not to do it. One evening I decided to use up a bunch of left over ingredients in the fridge to make a rustic pasta sauce which actually turned out to be pretty damn good.

– Spaghetti
– 7oz can tomatoes
– 1 cup red wine
– Proscuitto
– 1 small onion
– 2 medium potatoes
– Salt and pepper to taste
– Olive oil
– 2 cloves garlic
– Paprika (optional)
– 1 cup Parmigiano

In a pan, add olive oil. When heated add potatoes that have been cut into small cubes. Continue until about half cooked. Add chopped onions. After about 3 minutes add thinly sliced proscuitto. Add garlic and after a minute add the wine and cook for about 1 minute then add tomato can. Let cook for a few minutes. Add salt, pepper and paprika. Let simmer or 10-15 minutes and at the end mix in the parmigiano.

Serve on spaghetti.
