Chinese Style Crispy Pork Belly

?1kg piece of pork belly
?2 tsp five spice powder
?2 tsp salt

Dipping sauce

?3 tbsp light soy sauce
?1 tsp freshly grated ginger
?1 tbsp sweet chilli sauce

Start by getting a sharp knife and scoring the top of the fat in a criss-cross pattern. (That just means cut the fat) Next rub the five spice and salt all over the fat and underside of the pork. It is best to leave uncovered in the fridge over night, but a couple of hours will do if you don’t have time. This helps it to dry out and become crispier.

Preheat the oven to its hottest setting. Put the Pork on a rack fat side up and put in the oven for 10 minutes. Then turn heat down to 180c/ gas 4 and leave to cook for a further 1 hour and 30 minutes. If the fat is not crispy by then you can place it under the grill to give it an extra blast. You will see the fat bubbling up and going crispier. Make sure if you do that to keep an eye on it in case it burns.

To make the dipping sauce, simply mix all the ingredients together. Serve this with the crispy pork and some steamed rice
